Kick off Christmas with a hearty breakfast potato bake – recipe

If you're a fan of a Christmas morning fry-up, we're introducing you to something a little different to try as the festivities get underway.

This potato bake features delicious ingredients including sausages, peppers, hash browns, and cheese. It's hearty and wholesome and is sure to fill you up ahead of a day of celebrations, presents, and even more food and drink.

It is great served with some bacon and eggs- make sure you cook it until it's golden brown so the top is nice and crispy.

Serves 8-10

Ingredients

450g sausage meat, removed from casing if necessary

½ medium green pepper, diced

½ medium red pepper, diced

1 medium brown onion, diced

8 medium eggs

350ml double cream

150g mature Cheddar, grated

1 tsp salt

½ tsp black pepper

450g frozen hash browns

1 tsp chives, finely chopped

1. Preheat the oven to 180˚C/150˚C fan/gas mark 4 and grease a 30cm x 20cm baking dish, then set it aside.

2. On medium to high heat, cook the sausage meat in a large pan, breaking it up as you go. Once fully cooked, remove from the pan and set aside on a large plate lined with kitchen towel to allow some of the fat to drain.

3. In the same pan, cook the peppers and onion until beginning to soften, 5-7 minutes, then set aside.

4. In a bowl, whisk the eggs until the yolks and white are fully combined; add the double cream, fried vegetables, half of the cheese and the salt and pepper.

5. Add the cooked sausage meat and frozen hash browns to the baking dish and combine. Pour the egg mixture over the sausage and hash browns and top with the remaining cheese.

6. Cover with baking foil and bake in the oven for 25 minutes. Remove the foil and continue to bake uncovered for another 25 minutes or until the centre is set.

7. Sprinkle the chives over the top, and serve.
