But why do we celebrate Taco Day? Back in 2009, American restaurant chain Del Taco is believed to have sparked the annual event. Others soon jumped on the bandwagon and the foodie calendar date has been observed ever since.
If you're looking to take part in the tasty event, we're here to help. You can use this easy slow cooker hack to make seriously delicious beef tacos…
Pull-Apart Slow Cooker Beef Tacos
TikTok foodie Ashley, @xxnikkii, shared a simple recipe for pulled beef tacos back in 2020. You'll need the following ingredients…
Ingredients:
- boneless beef joint
- beef broth or stock
- garlic
- coriander
- two limes
- four tablespoons tomato puree
- one tablespoon of cumin
- one tablespoon of garlic salt
- one teaspoon of oregano
- two teaspoons of chilli powder.
- corn tortillas
Method:
- Start with a boneless joint of beef, season with salt and pepper (you can sear it on both sides to lock in the flavour)
- Add 3/4 cups of beef broth to the slow cooker and add your meat. Keep it whole, not in chunks
- Then, take your food processor ( or a bowl and a hand blender)
- Add garlic and blitz it, then add coriander, tomato paste, lime juice, a tablespoon of cumin the same of garlic salt, one teaspoon of oregano and two teaspoons of chilli powder
- Blitz the mix together and add some beef broth to help the mix blend
- Coat the meat with the paste
- Add another 3/4 cup of beef broth to the slow cooker
- Cook on low for eight to 10 hours
- When it’s cooked tear apart the melt-in-the-mouth beef with two forks
And there you have it, perfect, soft beef for tacos.
To serve: just heat your tortillas in a pan, add in some beef and top with cheese, lettuce and pico de gallo. Top with more coriander and lime juice to taste – and guacamole if you love avocado.
